Joseph Harding (* 22. März 1805 in Sturton Farm, Wanstrow, Somerset; † 1. Mai 1876 in Vale Court Farm, Marksbury, Somerset) war ein englischer Käsehersteller. Er entwickelte die Methoden für die moderne Produktion von Cheddar.
